Grocery shopping: that mundane task we all must do to feed our bodies. Even though I’m ordering groceries primarily online, I just never know if I’ll get all the groceries I ordered, and it still feels like such a chore.
I don’t know about you, but there are days that I’m not feeling it! Recently, I had one of those days.
Since I decided not to do my grocery shopping, I had to get creative and whip up something for my husband and 2 sons (all over 6 feet — help!). But, having learned from my late mother how to make a meal out of practically nothing, I didn’t sweat it.
I took an inventory of what I had on hand:
- 6 chicken tenders
- 1 sweet onion
- 1/2 red pepper
- 1/2 bag of yellow rice
- 1 can of black beans
- 1/2 bag of frozen, southwestern corn
- 1 pack of flour tortillas
- 1 pack of fajita seasoning
- 1 jar of mango salsa
Immediately I went into stealth mode and decided to cook chicken fajitas with yellow rice, black beans/corn, and a side salad. The next time you decide not to do your grocery shopping—don’t panic, just get creative!
