Now that the nest is just about empty, I cook my most extravagant meals on Sundays. Well, not exactly extravagant, but I spend more time on Sunday meals than I do during the week.
My husband loves my stuffed peppers, so I decided to make his favorite today. Stuffed peppers is a very easy meal to make, and doesn’t require a lot of ingredients. In fact, I only used the ingredients shown in the photo below:
After the peppers were halved and steamed until tender, I stuffed them with a mixture of brown rice, diced tomatoes and fresh garlic. The peppers were then topped with spaghetti sauce and mozzarella cheese, and paired with a garden salad.
Another healthy meal made simple!
