For awhile now, I’ve wanted to prepare chicken piccata. I ordered this dish a few times, while eating out, and loved the lemony flavor with the breaded chicken.
This is a simple dish, which I could’ve prepared without a recipe, but I chose to use and modify the recipes from Food Network’s Ina Garten and Robert Irvine. I’ve learned that when cooking from a recipe, you still need to include your own personal spin. For this dish, my personal touch was to add fresh, baby spinach and angel hair pasta — excellent choice!
