While I enjoy cooking Sunday dinner, I don’t enjoy spending much time in the kitchen when it’s 90 degrees outside. And, I’m definitely not in the mood for eating a heavy meal that will make me feel sluggish.
So, on those hot and muggy days, I lighten up my Sunday meal with grilled salmon, a garden pasta salad, carrot and raisin salad, and steamed broccoli. This meal combination is light, and easy to prepare. In less than an hour, I’ve prepared a tasty meal, with several hours left in the day, for me to kick up my feet and relax. And, my family thinks I’ve spent a lot of time cooking dinner — but, let’s keep that a secret between us!
