Now that we are nearing the holiday season, we still need to stay focused on our year-long goals of eating and staying healthy. However, the holiday season can throw a curve ball into our efforts. It is a time when many of us over-indulge.
In previous years, for Thanksgiving — until I got hip about mini pies, I would make 9-inch butternut squash pies, topped with spiced apples. Yum! But, with a regular size pie, you tend to slice a much bigger piece than needed. Now, I make the pies, but smaller versions. The family really enjoys having the individual pies. And, I’m happy to enjoy a pie, without feeling that all my efforts to stay healthy, & fit are being thrown out the window. Don’t they look scrumptious!
