Although I’ve been vegetarian for over 30 years, I still find myself getting bored with eating the same foods day after day. I particularly get this feeling when it comes to salad. Sure, salads are great, but eating a plate of lettuce every day can get boring.
What keeps me from getting salad boredom is a little creativity. Each time I make a salad I try to prepare something a little different. This creativity worked well when I was raising my children and teaching them to eat healthy.
I usually prepare my salad with romaine lettuce, which has the highest amount of vitamins A & C. But, these salad ideas work just as well with iceberg lettuce. Try some of these salad toppers to add a little pizzazz to a boring salad:
- Grilled fish – I often prepare salmon or tilapia marinated in lemon butter or herb seasoning
- Grilled chicken – marinated in caesar salad dressing or low-sodium teriyaki sauce
- Sliced turkey lunch meat, chopped boiled egg, and sliced pickled beets
- Shelled & steamed edamames (soybeans) with ginger sesame or toasted sesame salad dressing

Great suggestions. I too have found mysellf bored with salads as a vegetarian. However, adding marinated or well seasoned fish or shrimp, nuts or beans have helped a lot. Another idea is to throw in some fruit like apples, pears, raisins or craisins to add some flavor.

I’m so glad the information was helpful! It takes a lot of discipline to have a vegetarian diet. But, you can make your meals pop with a little creativity. I use many of my late mother’s soul food recipes and give them a creative twist for a healthy alternative. If you need any ideas for healthy recipes, let me know; I have plenty! If you like fruit on your salad, try adding some fresh strawberries and use a balsamic vinaigrette salad dressing — yum!
