Summer squash is plentiful during the month of July. The farmers markets and grocers are stocked with yellow squash, zucchini, and pattypan (the big, green and yellow squash).
Yet, with so much variety and abundance of squash, it can be difficult to think of new ways to prepare it. There are many ways that summer squash can be prepared: grilled, sauteed, fried, and roasted are a few. I like to grill my squash with onions, peppers, and tomatoes. Sprinkled with a little olive oil and seasoning, grilled squash can make a very light meal, on a hot summer day.
