After a long, weekend away celebrating my wedding anniversary, the last thing I wanted to do was spend a lot of time in the kitchen, after returning home. Whenever I’m short on time, or just don’t feel like preparing a time-consuming dinner, I always resort to my favorite: breakfast, or brinner (breakfast for dinner).
My southern comfort breakfast, with baked salmon, is a favorite in my household. What I like about this meal is that it is hearty, tasty, and just down-right comforting. Another pleasure with preparing this meal is quick preparation. In less than 30 minutes, the meal is ready to eat.
Fresh or frozen salmon works well for this meal. I’ve successfully baked frozen salmon that tasted just as good as fresh. I’m sure there are gourmet chefs who may disagree with me on that point, but what I’ve learned over the years is that eating healthy doesn’t have to be complicated. Healthy eating is about eating nutritious, simple foods — even frozen.
Serving this meal with scrambled eggs, farina, a wheat cereal; think Cream of Wheat, is my take on salmon with grits. My family doesn’t like grits, so as a substitute, I cook farina prepared with soy milk, for a creamy consistency. Serve this meal with your favorite wheat toast, bagel, or muffin, and you have a perfect down-home, southern-cooked breakfast.
