Since I don’t normally cook from recipes, I find myself fusing different ethnic tastes, and many times I’ve surprised myself with the outcome. One such meal is the dish pictured here, which I called Mediterranean Tilapia with Pasta & Vegetables:
The preparation for this dish was relatively easy and quick. I used simple ingredients: whole wheat angel hair pasta, onions, broccoli, cauliflower, carrots, fire-roasted diced tomatoes, and tilapia. As always, limit the salt, and season with fresh herbs and garlic.
This meal can be prepared during the week, and served with a tossed salad and garlic bread. Yum! Now, that’s what I’m talking about — quick, simple, & healthy meals.
